Traditional Noodle Pudding for Rosh Hashanna

Apples and honey and sweet noodle pudding are traditional Rosh Hashannah foods. The following are 3 variations of noodle pudding that use these ingredients to form very tasty "kugels" to be served with a holiday meal.

Sweet Apricot/Apple Noodle Pudding

8 oz. box of medium size noodles
2 tablespoons margarine (melted)
1/4 cup apple juice
3 eggs, beaten
1/4 cup sugar
3 tablespoons apricot preserves
1 large apple peeled, cored and cut into thin pieces
1 teaspoon honey

Preheat oven to 350 degrees. Grease a 9" x 13" baking dish.

Cook noodles as per directions on the box and drain well. Place all other ingredients in a separate bowl and mix well. Stir noodles into the mixture. Pour into the greased baking dish. Bake for approximately 1 hour.

Apple Noodle Kugel

1 large box wide noodles (12 oz.)
4 large Golden Delicious apples (peeled, cored and sliced into thin pieces)
4 eggs, beaten
2 cups apple juice
1/4 cup margarine (melted)
1/2 cup sugar
1 tablespoon vanilla
4 teaspoons honey
1/2 cup golden raisins

Cook noodles according to directions on the box. Drain noodles well and set aside. Preheat oven to 350 degrees. Grease and set aside a 3-quart baking dish. Hold prepared apples in separate bowl.

Combine and blend the rest of the ingredients together in a large mixing bowl. Place a layer of noodles on the bottom of the greased baking dish; add a layer of apples followed by the mixture you have blended together. Alternate layers of noodles, apples and blended mixture, ending with blended ingredients covered with apples.

Bake for approximately 1 hour.

Easy Noodle Pudding

1/2 lb. medium noodles (cooked and drained)
3 eggs, beaten
1/2 cup raisins
1/4 lb. margarine, melted
1/2 cup sugar
1 jar apple sauce (medium size)
1 teaspoon cinnamon
1 cup corn flakes, crushed

Preheat oven to 350 degrees. Grease a 9" x 13" baking pan. Mix all incredients other than cinnamon and corn flakes together with noodles. Pour into the greased baking pan. Top with crushed corn flakes and sprinkle cinnamon on top.

Bake for approximately 1 hour.
