Veal and Peppers was one of mom's favorite recipes. It's healthy, delicious and easy to prepare, what could be better? It also looks festive and appealing on the dinner plate. I suspect that the broccoli is part of this recipe simply because that was the only way mom could make sure her children were eating vegetables.
6 thin veal chops cut into small, but not too small pieces
3/4 lb. green and red peppers, sliced into strips
1/2 cup sliced broccoli
3 large onions, chopped
1 jar of your favorite marinara sauce
1 can of sliced mushrooms (use fresh if you prefer)
1 small can of crushed tomatos + 1 can of water
3 cloves of garlic
2 tablespoons of olive oil
salt and pepper to taste
Saute chopped onions, crushed garlic, sliced peppers, broccoli and mushrooms in olive oil until onions are soft and glazed. Hold the liquid from the can of mushrooms to use with the marinara sauce. Add the other ingredients, holding the veal aside and being careful to include the liquid from the can of mushrooms. Stir well, then add veal. If you have used fresh mushrooms, add in one-quarter of a cup of water.
Bake in 350 degree oven for 35 - 40 minutes. Serve with your favorite rice recipe.

It not only is delicious, it looks very colorful on the plate. It's simple to prepare and yet gives the illusion of a complicated recipe.
