SALMON LOAF
1 lb. can of salmon (drained)
1 can vegetarian vegetable soup
1/4 cup Cheerios or other cerial pulverized in blender or 1/4 cup bread crumbs
3 eggs
1 cup light sour cream
Mix all of the ingredients together. Bake in a greased loaf pan (9x5x2-1/2) at 350 degrees for 1 hour. Serve cold or hot. This is an easy recipe to make and served cold, It's a great dish for a warm summer night. Serve with your favorite rice dish and/or your choice of vegetables or a salad.

I've made a similar recipe for many years. It's a good luncheon recipe if you're having a group over to play cards. I've served it with cucumber salad and potato chips.
