The Recipe Exchange

 
Mom’s Chicken and Fruit
 
1 chicken quartered
½ cup white wine
1 large can of sliced peaches (unsweetened)
1 large can of pineapple chunks (unsweetened)
Salt and pepper to taste
 
Mix together the liquid from the can of peaches and the can of pineapple. Place the chicken into this liquid and let it marinate in the refrigerator for 1-1/2 to 2 hours. Line a large baking pan with silver foil. Place the marinated chicken in the pan skin side down. Season with salt and pepper to taste. Mix the wine with the marinade. Pour ½ of this liquid over the chicken. Bake at 350 for approximately 40 minutes.
 
Remove the pan from the oven. Using the same baking pan, turn the chicken over so the skin side is on top. Place the canned peaches and pineapple over the chicken. Pour the remainder of the marinade on top of the chicken and fruit. Bake until brown. Baste several times while baking.
 
This is a simple but festive dish. I serve it with brown rice.
