Potato Pancakes (Latkes) for Chanukah

Traditional Potato Latkes
 
2 large baking potatos
2 eggs
1/2 cup matzah meal or bread crumbs
1 large onion
1/2 teaspoon sea salt
 
Grate potatoes and onion.  You can use a blender or food processor.  Beat eggs and add to mixture.  Stir in matzah meal and salt.  Fry slowly in hot oil.  Makes about 12 pancakes.  Serve with applesauce.
 
 
Fluffy Potato Pancakes
 
4 large potatoes
1/2 teaspoon salt
2 eggs separated
1/2 cup sour cream
 
Wash and peel potatoes.  Grate and place in colander set over bowl and let drain.  When the starch has settled in the bottom of the bowl, pour off the liquid.  Place drained potatoes back into mixing bowl.  Add sour cream and salt.  Beat egg yolks and add to potato mixture.  Beat egg whites until stiff; then fold the egg whites into the potato mixture.  Drop by spoonfuls on a hot, well greased skillet.  Turn and brown slowly on both sides.  Makes about 2 dozen pancakes.  Serve with applesauce.
