1 can of pumpkin or 1-1/4 cook and strained pumpkin
1/2 cup sugar
2 tablespoons butter
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
2 eggs (separated)
1-1/4 cup scalded milk
Frozen pie crust or prepare your own favorite pie crust recipe
Combine together pumpkin, sugar, butter, ginger, cinnamon and salt. Separate eggs and add slightly beaten egg yolks to batter. Add scalded milk. Mix thoroughly. Beat egg whites until stiff. Fold stiffened egg whites into batter. Pour into pie crust. Bake at 400 degrees for 15 minutes. Reduce heat to 300 degrees and bake for 45 minutes longer.
You can substitute soy or cocoanut milk for cow's milk and shortening for butter in order to make this non-dairy.
