Potato Koogle for the Holidays
6 raw potatoes
6 baked potatoes
6 beaten eggs
2 onions
2 mashed cloves of garlic
1/4 cup matzo meal (can use bread crumbs)
A little salt and pepper to taste
Preheat oven to 350 degrees.
Peel 6 raw potatoes and emerse in cold water. Remove the skin from the 6 baked potatoes and mash. Remove raw potatoes from cold water; grate potatoes (can use food processor). Combine grated potatoes, mashed potatoes, onions, garlic, eggs and matzo meal or bread crumbs and seasoning. Pour into a well-greased baking pan. Stick a knife into a few places in the batter to get rid of air bubbles. Bake until brown on top, approximately 1 hour. Can garnish with parsley when serving.
