It's June and Father's Day will soon be here. Leg of lamb is always a family favorite. Try making it Greek style.
4-5 pound leg lf lamb (with or without the bone)
4 cloves of garlic
1 teaspoon sea salt
1/2 teaspoon pepper
2 lemons
1 teaspoon oregano
3 pounds of potatoes
1/4 cup olive oil
4 small pieces of Kefalotiri (spicy Greek cheese)
1-1/2 cup of water
Place oregano, sea salt, pepper, olive oil and lemon in a deep dish and mix.
Cut the fat away from the lamb. Wash it and place in a baking pan.
Use a sharp knife to make 4 slices in the meat about 1 inch long. Place cheese and cloves of garlic into the slices.
Pour the olive oil and lemon mixture over the lamb.
Peel and cut the potatoes. Place the potatoes around the leg of lamb in the baking pan.
Add the 1-1/2 cup of water. Cover with foil and bake for 2 hours at 350 degrees for 1 hour and 45 minutes.
Remove foil. Raise temperature to 450 for another 15 minutes or until lamb is done to your liking.
