This flourless chocolate cake is delicious and nutritious at the same time. If you don't believe it, try it for yourself. Serve hot, with or without a whipped topping. Your guests will be asking for more.
FLOURLESS CHOCOLATE CAKE
8 oz. Semi-sweet chocolate
1 teaspoon vanilla
2 medium sized ripe bananas
1/4 cup baked sweet potato
1/4 cup honey
1 egg plus 3 egg whites
Preheat oven to 350 degrees
Prepare about a dozen cupcake holders. Use cooking spray
In a double broiler melt chocolate and vanilla extract until chocolate is melted.
Mash bananas and sweet potato together until it’s a puree
Add honey to the bananas and sweet potato and mix until it’s blended together
Add melted chocolate to the blended puree
Beat 1 egg and add to puree. Mix well.
Beat egg whites until stiff peaks form
Fold puree into egg whites
spoon mix into cupcake tins that have been sprayed with cooking spray. Fill to top.
Bake for 18 - 20 minutes,
Serve hot, with or without whipped topping.

You do taste the bananna, and if you don't like bananna this is not a good recipe for you. However, I love bananna and I love chocolate and I love this cake. I've never made it as a cake, but I imagine it should be fine. I'm not sure how long you would bake it though, you'll have to experiment to figure that out. Let me know if you do, I'd probably like to try it myself. The cake is especially good when served hot with ice cream or cool whip on top.

Will my grandchildren like this cake or is it going to taste like egg and vegitables? Also, can I make it as a cake instead of as cupcakes?
