1 medium to large eggplant (cubed)
2 tablespoons olive oil
1 small onion
1 green pepper
1 pound can diced tomatoes
1/2 teaspoon basil
1/2 teaspoon garlic powder
Saute onion and sliced green pepper in olive oil. Add chopped tomatoes and simmer until onion starts to turn brown. Add eggplant and all other ingredients.. Cook over medium heat until eggplant is tender. (10 -15 minutes) Serve with rice and it becomes a main dish.
If you prefer, you can add 1 pound of chopped turkey. Add the turkey to the first step: saute it with the onion and green pepper until the meat turns brown. Follow the directions as described above.
With rice, will serve 3-4 people.
