Deviled Eggs for Easter

 

  1. Ingredients:

 

  • 6 eggs
  • 1/2 stalk celery, finely chopped
  • small onion, finely chopped
  • 1/4 cup mayonnaise
  • 3 drops of Tobasco
  • 1/4 teaspoon Basil
  • paprika, for garnish
  1.

Place eggs in a covered pot with boiling water and boil for 12 minutes.  Remove eggs from heat and let stand in the water for about 15 minutes.  Place eggs in a bowl with cool water and refrigerate for 1/2 hour.  Remove from refrigerator and peel the eggs.  The cool water will make the eggs easier to peel.

  4. Cut eggs in half. Remove yolks and place in a medium bowl. Mash the eggs together with the celery, onion, mayonnaise, Tobasco and Basil.  Fill the egg  white halves with the egg yolk mixture. Sprinkle paprika over the eggs.  Place in refrigerator until ready to serve.

 
If you want a milder flavor, use less Tobasco.
