My mom was a fabulous cook and baker. She used to bake Apricot Bread for us to eat for breakfast or as a snack after school. I have always loved apricots and this recipe is one of my favorites. With cooler weather approaching here in the northeast, you might be interested in doing some baking. The following is my mom's recipe for Apricot Bread:
1 cup chopped walnuts
3 cups flour
4 teaspoons baking power
1 egg
1 tablespoon shortening
3/4 cups cooked dried apricots
1 cup sugar
1 teaspons salt
1-1/4 cups milk
Preheat oven to 350 degrees.
Drain and chop apricots, add chopped walnuts, flour, sugar, baking powder, salt. Beat eggs and combine with milk and shortening. Stir egg mixture into the dry ingredients. Blend together until flour is completely moistened. Pour into greased baking pan (8-1/2 x 4-1/2 x 2-1/2). Bake for approximately 1-1/4 hours, but check after 1 hour to see how it is doing as I have found that the baking time can vary when you are using cooked fruit in a recipe.
